Lasagna Roll Ups

A different twist on lasagna. This freezes well, so you can make one now and save another meal for later!

Gather ingredients

  • 12 ounces lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese- divided
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 10 ounces frozen spinach- thawed
  • 1 jar pasta sauce

Instructions

Preheat oven to 400 degrees.

Boil lasagna noodles in salted water until just slightly undercooked (al dente.)

Drain and let the noodles cool enough to handle.

Take the thawed spinach and squeeze out the excess water.

In a mixing bowl, combine spinach, 1 cup mozzarella, ricotta, parmesan, egg, salt and pepper.

Mix filling until smooth.

Putting it together

Spread 1/4 cup of the filling evenly across each noodle. You can add a little pasta sauce on top if you like.

Roll tightly and place seam-side down in a casserole dish.

Finishing touches

Pour pasta sauce over the roll ups, then sprinkle with remaining mozzarella.

Cover with foil and bake for 30 minutes.

Remove foil and bake until the cheese is bubbly and golden.

Serve hot
