With what seems to be sugar and carbs everywhere, when I find something a little healthier, I am game to try it. This recipe was a pleasant surprise!
Gather your ingredients

For the dough
- 1 large overripe banana- mashed
- 3/4 cup coconut yogurt
- 2-1/4 cup self rising flour
Filling
- 4 Medjool dates, soaked in hot water for 5 minutes, drain & mash
- 1 tablespoon almond butter, I used peanut butter
- 2 teaspoons cinnamon, plus more for sprinkling
- a pinch of salt
Icing
- 3 tablespoons coconut yogurt
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees. Spray baking dish with non-stick cooking spray.



- Soak the dates in hot water for 5 minutes, drain and mash
- Mash the bananas
- In a medium bowl add dry dough ingredients
Making the dough



- Add the banana and yogurt
- Mix all ingredients until a dough forms
- Flour a surface and knead dough until smooth
- Roll out into a 1/4 inch thick rectangle
Making the filling



- Combine the filling ingredients- peanut butter and cinnamon to the mashed dates
Spread the filling

Spread the filling over the dough. Sprinkle additional cinnamon over the top.
Putting the cinnamon rolls together



- Roll the dough from the longer side
- Cut into slices
Baking

Arrange cinnamon rolls in the baking dish.
Bake at 350 degrees for 20-25 minutes, until golden.
Icing


- Whisk together icing ingredients. I let the baked rolls cool a bit so the icing would not all just melt into the rolls. I did use a bit of powdered sugar to make the icing thicker and a little sweeter. Baby steps!
Lastly

A healthier no-rise cinnamon roll that is not only quick and easy, but more importantly, tastes good!
Store them in the fridge for 4-5 days. You can reheat them in the microwave.
These do have an undertone of banana taste, which I didn’t mind.
I will make these again.
