I love making soup and this hearty soup is delicious. It calls for ditalini pasta. I couldn’t find it. Instead I used campanelle. I don’t know why different shaped pasta seems to taste different, but we enjoyed this pasta in the soup!
Gather your ingredients

- 1 pound Italian sausage
- 2 tablespoons olive oil
- 1 onion- diced
- 3 garlic cloves- minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1-1/2 cups ditalini pasta
- 1 teaspoon oregano
- 1 teaspoon basil
- salt and pepper to taste
- 4 cups fresh spinach- roughly chopped
- 1 cup grated Parmesan cheese
Directions

In a large frying pan, brown sausage over medium heat. Break up into pieces as it cooks.
Once fully cooked, remove the sausage with a slotted spoon and set aside.
Next


In the same frying pan, add olive oil and sauté the onion until translucent. This will take about 5 minutes. Add the minced garlic and cook for another minute.
Adding the liquid

In a large pot, put in the sausage, onion and garlic.
Pour in the chicken broth. Bring it to a boil and then reduce to a simmer.


Stir in heavy cream, oregano and basil. Season with salt and pepper.
Next add the pasta. Simmer for about 8 minutes.
Add the spinach


Now add the chopped spinach. Mix it into the soup, cooking until the spinach wilts. This will take about 2 minutes.
The last ingredient

Remove the pot from the stove. Stir in the grated Parmesan cheese until mixed in completely.
