A Healthy Delicious Breakfast Option
With no refined flour or added sweeteners, this is great for a meal or even a snack option! I make these in a Belgian waffle maker and make them about half the size. They are pretty filling. This recipe makes approximately 5 half size Belgian waffles.
Ingredients:
- 2 cups oat flour
- 2 bananas
- 2 eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- pinch of ground cinnamon
- 1-2 tsp for lightly brushing the waffle maker
Making the Waffles:
- Roughly break up the bananas into small pieces. Add 1/2 cup milk and blend together.
- Then add the dry ingredients together in a small bowl (oat flour, baking powder, salt and cinnamon) and mix together.
- Add the rest of the ingredients (banana-milk mixture, 1/4 cup milk, eggs and vanilla extract). Whisk until the batter is smooth.
- Add about 1/4 cup batter to the waffle maker. Each waffle takes approximately 3-4 minutes to make. Waffle irons all vary.
These waffles don’t need any maple syrup! I use vanilla yogurt and fresh fruit. I have had them as a snack with peanut butter spread on top. They refrigerate and freeze well.
