Banana Oatmeal Waffles


A Healthy Delicious Breakfast Option

Ingredients:

  • 2 cups oat flour
  • 2 bananas
  • 2 eggs
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • pinch of ground cinnamon
  • 1-2 tsp for lightly brushing the waffle maker

Making the Waffles:

  • Roughly break up the bananas into small pieces. Add 1/2 cup milk and blend together.
  • Then add the dry ingredients together in a small bowl (oat flour, baking powder, salt and cinnamon) and mix together.
  • Add the rest of the ingredients (banana-milk mixture, 1/4 cup milk, eggs and vanilla extract). Whisk until the batter is smooth.
  • Add about 1/4 cup batter to the waffle maker. Each waffle takes approximately 3-4 minutes to make. Waffle irons all vary.

These waffles don’t need any maple syrup! I use vanilla yogurt and fresh fruit. I have had them as a snack with peanut butter spread on top. They refrigerate and freeze well.
