A healthy and delicious salad. Great to make the night before.
Gather your ingredients

- 2 small bags of coleslaw mix (about 12 cups)
- 4 cups rotisserie chicken, chopped
- 1 cup dried cranberries
- 3/4 cup onion
- 1-2 small cans mandarin oranges, drained
- 1/4 cup sesame seeds
- 1 cup extra-virgin olive oil
- 1/2 cup balsamic vinegar
- 4 tablespoons soy sauce
- 3-4 cloves of garlic, chopped
- 4 tablespoons honey
- 2 tablespoons minced ginger
Instructions


- Chop the chicken, dice the onion, drain the mandarin oranges.
- Layer the cabbage in a large bowl with chicken, cranberries, onion, sesame seeds and mandarin oranges. You will be able to repeat the layering about 3 times.


Making the dressing


- Combine olive oil, balsamic vinegar, soy sauce, garlic, honey, and ginger in a blender or bowl. Add 3 tablespoons water. Blend until smooth.


Putting it all together


- Lightly pour the dressing over the salad mixture, according to how moist you like the salad. Gently toss and serve.
- We like the salad after it sits overnight in the fridge. The flavors meld together and the cabbage wilts.
- Note: You may have a little dressing left over.
