Asian Chicken Cranberry Salad

A healthy and delicious salad. Great to make the night before.

Gather your ingredients

  • 2 small bags of coleslaw mix (about 12 cups)
  • 4 cups rotisserie chicken, chopped
  • 1 cup dried cranberries
  • 3/4 cup onion
  • 1-2 small cans mandarin oranges, drained
  • 1/4 cup sesame seeds
  • 1 cup extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 4 tablespoons soy sauce
  • 3-4 cloves of garlic, chopped
  • 4 tablespoons honey
  • 2 tablespoons minced ginger

Instructions

  1. Chop the chicken, dice the onion, drain the mandarin oranges.
  2. Layer the cabbage in a large bowl with chicken, cranberries, onion, sesame seeds and mandarin oranges. You will be able to repeat the layering about 3 times.

Making the dressing

  • Combine olive oil, balsamic vinegar, soy sauce, garlic, honey, and ginger in a blender or bowl. Add 3 tablespoons water. Blend until smooth.

Putting it all together

  • Lightly pour the dressing over the salad mixture, according to how moist you like the salad. Gently toss and serve.
  • We like the salad after it sits overnight in the fridge. The flavors meld together and the cabbage wilts.
  • Note: You may have a little dressing left over.
