Chocolate Pumpkin Bread


A healthy option

I like to try new recipes. I even like to try recipes that are healthier for you. Don’t let the pumpkin scare you. You won’t even taste it! This bread tastes good, is moist and boasts 100 calories per serving.

Gather your ingredients

  • 1-1/2 cups flour
  • 1/3 cup cocoa powder
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 3/4 cup sugar
  • 1 cup pumpkin puree
  • 1/4 cup peanut butter (you can use oil instead)
  • 1/4 cup water
  • 2 teaspoons vanilla
  • 1/2 cup chocolate chips (optional)

Directions:

Preheat the oven to 350 degrees.

Grease a loaf pan.

First add dry ingredients

In a large bowl, add dry ingredients, stir to combine.

Next add wet ingredients

Add the pumpkin, water, peanut butter, and vanilla to the bowl. Stir to form a batter.

Pour batter into the loaf pan

Spread into the prepared pan. Sprinkle with chocolate chips on top.

Bake

Bake for about 40 minutes or until a toothpick inserted into the center comes out clean.

Let cool about 15 minutes before removing from the pan. Cool completely before slicing.

Notes:

If the loaf seems to be baking too fast around the edges, cover it loosely with foil and continue to bake until the center is baked.

For a frosting on top, add more chocolate chips and spread while still warm.

This loaf makes 12 servings at a skinny 100 calories per slice!
